WW SHRIMP COCKTAIL

Ingredients:

For the Shrimp:

  • 1 pound large shrimp, peeled and deveined
  • 1 lemon, sliced
  • 1 bay leaf
  • 2 cloves garlic, minced
  • Salt and pepper, to taste

For the Cocktail Sauce:

  • 1/2 cup ketchup
  • 2 tablespoons horseradish (adjust to taste for desired level of spiciness)
  • 1 tablespoon lemon juice
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon hot sauce (optional, for extra heat)

Instructions:

  1. Cook the Shrimp:
    • In a large pot, bring water to a boil.
    • Add lemon slices, a bay leaf, minced garlic, salt, and pepper to the boiling water.
    • Add the peeled and deveined shrimp to the boiling water.
    • Cook for about 2-3 minutes or until the shrimp turn pink and opaque.
    • Drain the shrimp and immediately transfer them to an ice bath to stop the cooking process. This helps maintain their tenderness.
  2. Make the Cocktail Sauce:
    • In a small bowl, combine ketchup, horseradish, lemon juice, Worcestershire sauce, and hot sauce (if using). Adjust the amount of horseradish and hot sauce to your preferred level of spiciness.
  3. Serve:
    • Arrange the cooked and chilled shrimp on a serving platter or individual cocktail glasses.
    • Serve the cocktail sauce on the side or drizzle it over the shrimp.
    • Optionally, garnish with lemon wedges or fresh herbs for added flavor and presentation.
