WW SHRIMP COCKTAIL
Ingredients:
For the Shrimp:
- 1 pound large shrimp, peeled and deveined
- 1 lemon, sliced
- 1 bay leaf
- 2 cloves garlic, minced
- Salt and pepper, to taste
For the Cocktail Sauce:
- 1/2 cup ketchup
- 2 tablespoons horseradish (adjust to taste for desired level of spiciness)
- 1 tablespoon lemon juice
- 1 teaspoon Worcestershire sauce
- 1/2 teaspoon hot sauce (optional, for extra heat)
Instructions:
- Cook the Shrimp:
- In a large pot, bring water to a boil.
- Add lemon slices, a bay leaf, minced garlic, salt, and pepper to the boiling water.
- Add the peeled and deveined shrimp to the boiling water.
- Cook for about 2-3 minutes or until the shrimp turn pink and opaque.
- Drain the shrimp and immediately transfer them to an ice bath to stop the cooking process. This helps maintain their tenderness.
- Make the Cocktail Sauce:
- In a small bowl, combine ketchup, horseradish, lemon juice, Worcestershire sauce, and hot sauce (if using). Adjust the amount of horseradish and hot sauce to your preferred level of spiciness.
- Serve:
- Arrange the cooked and chilled shrimp on a serving platter or individual cocktail glasses.
- Serve the cocktail sauce on the side or drizzle it over the shrimp.
- Optionally, garnish with lemon wedges or fresh herbs for added flavor and presentation.
