Ingredients:
For the Chaffle Batter:
1/2 cup part-skim ricotta cheese (3 WW SmartPoints per 1/2 cup)
2 large eggs
1 tablespoon unsweetened cocoa powder
1 teaspoon vanilla extract
1/4 teaspoon baking powder
2-3 packets of your preferred zero-calorie sweetener (adjust to taste)
A pinch of salt
For the Oreo Filling:
2 reduced-fat Oreo cookies (adjust WW SmartPoints based on the specific brand and type)
Reduced-fat whipped topping (optional)
Instructions:
Preheat your mini waffle maker according to the manufacturer’s instructions.
In a mixing bowl, combine the ricotta cheese, eggs, unsweetened cocoa powder, vanilla extract, baking powder, sweetener, and a pinch of salt. Mix until the batter is well combined and smooth.
Crush the reduced-fat Oreo cookies into small pieces. You can use a food processor or place the cookies in a resealable bag and crush them with a rolling pin.
Lightly grease the waffle maker with non-stick cooking spray.
Pour half of the chaffle batter into the center of the waffle maker.
Sprinkle half of the crushed Oreo cookies on top of the batter.
Close the waffle maker and cook the chaffle for about 4-5 minutes, or until it’s crispy and cooked to your liking.
Carefully remove the chaffle from the waffle maker and let it cool for a minute.
If desired, add a dollop of reduced-fat whipped topping and sprinkle the remaining crushed Oreo cookies on top.
Repeat the process to make the second Oreo chaffle.
Serve the Oreo chaffles warm, and enjoy!
