Ingredients
- 12 baked mini phyllo shells (or baked wonton wrappers, 1 point each)
- 8 oz lean ground turkey (99% fat-free) or extra-lean ground beef
- 1 packet taco seasoning (low-sodium)
- ½ cup fat-free Greek yogurt (instead of sour cream)
- ½ cup reduced-fat shredded cheddar cheese
- ½ cup diced tomatoes
- 1–2 jalapeños, thinly sliced
Instructions
- Cook the meat:
- In a skillet, brown the ground turkey/beef.
- Drain any liquid, add taco seasoning + a splash of water, and cook until thickened.
- Assemble the cups:
- Place the phyllo shells (or baked wonton cups) on a tray.
- Spoon ~1 tablespoon of taco meat into each cup.
- Top them:
- Add a small sprinkle of shredded cheese.
- Dollop with Greek yogurt.
- Garnish with diced tomato and jalapeño slices.
- Serve immediately (so shells stay crispy).
