WW CAROT CREAM PIES
Ingredients:
For the Pie Filling:
- 2 cups grated carrots (about 4-5 medium carrots)
- 1/2 cup unsweetened applesauce
- 1/2 cup fat-free Greek yogurt
- 1/4 cup honey or maple syrup
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground ginger
- 1/4 teaspoon salt
- 2 large eggs
For the Pie Crust:
- 1 pre-made 9-inch graham cracker crust or a homemade graham cracker crust if you prefer
- For a homemade crust, you will need graham crackers, a bit of sweetener (optional), and a small amount of melted butter or a butter substitute.
Instructions:
- Preheat your oven to 350°F (175°C).
- If you’re making a homemade graham cracker crust, crush the graham crackers, combine them with a bit of sweetener (like a sugar substitute if you prefer), and enough melted butter or a butter substitute to form a crust. Press the mixture into the bottom of a 9-inch pie pan. Bake the crust for about 8-10 minutes, then let it cool.
- In a large mixing bowl, combine the grated carrots, unsweetened applesauce, Greek yogurt, honey or maple syrup, vanilla extract, ground cinnamon, ground nutmeg, ground ginger, and salt. Mix well to combine these ingredients.
- Beat the eggs separately and then add them to the mixture. Stir until everything is well incorporated.
- Pour the carrot mixture into the prepared pie crust.
- Bake in the preheated oven for about 40-45 minutes or until the center is set and a toothpick or knife inserted into the center comes out clean.
- Allow the pie to cool completely, and then refrigerate it for a few hours or overnight to allow it to set and develop its flavors.
- Once the pie has chilled, it’s ready to serve. You can garnish it with a dollop of fat-free whipped topping or a sprinkle of ground cinnamon, if desired.
