WW BLUEBERRY LEMON DONUTS

Ingredients:

For the Donuts:

1 cup all-purpose flour
1/4 cup sugar or a sugar substitute (adjust to taste)
1/4 cup unsweetened applesauce
1/4 cup non-fat Greek yogurt
1 egg
1 teaspoon baking powder
1/2 teaspoon baking soda

Zest of one lemon
2 tablespoons fresh lemon juice

Instructions:

Preheat your oven to 350°F (175°C). Grease a donut pan with non-stick cooking spray.
In a mixing bowl, whisk together the flour, sugar (or sugar substitute), baking powder, baking soda, and salt.
In a separate bowl, combine the unsweetened applesauce, non-fat Greek yogurt, egg, lemon zest, and fresh lemon juice.
Gradually add the wet ingredients to the dry ingredients and mix until just combined.
Gently fold in the blueberries.
Carefully spoon the batter into the prepared donut pan, filling each donut well about two-thirds full.
Bake in the preheated oven for approximately 12-15 minutes or until the donuts are lightly golden and a toothpick inserted into one comes out clean.
