WHITE BEAN CAULIFLOWER CURRY

Ingredients:

  • 1 cup dried white beans, soaked overnight (or 2 cans of white beans, drained and rinsed)
  • ONE medium-sized cauliflower, cut into florets
  • 1 large onion, finely chopped
  • 3 cloves garlic, minced
  • 1-inch ginger, grated
  • 2 large tomatoes, chopped
  • 1 can (400 ml) coconut milk
  • 2 tablespoons curry powder
  • 1 teaspoon ground turmeric
  • ONE teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon cayenne pepper (adjust to taste)
  • Salt and pepper to taste
  • 2 tablespoons vegetable oil
  • Fresh cilantro for garnish
  • Cooked basmati rice for serving
