Weight Watchers Meatball Subs (Per Serving):
Ingredients:
For the Meatballs:
1 pound lean ground turkey or chicken
1/2 cup whole wheat breadcrumbs
1/4 cup grated Parmesan cheese
1/4 cup chopped fresh parsley
1 large egg
2 cloves garlic, minced
Salt and pepper to taste
For the Marinara Sauce:
1 can (14 oz) crushed tomatoes
1 clove garlic, minced
1 teaspoon dried oregano
1 teaspoon dried basil
Salt and pepper to taste
Additional Ingredients:
Whole wheat sub rolls or baguettes
Reduced-fat mozzarella cheese, shredded
Fresh basil leaves, for garnish (optional)
Instructions:
Preheat the oven to 375°F (190°C).
In a large bowl, combine the ground turkey or chicken, breadcrumbs, Parmesan cheese, parsley, egg, minced garlic, salt, and pepper. Mix until well combined.
Shape the mixture into meatballs (about 1 inch in diameter) and place them on a baking sheet lined with parchment paper.
Bake the meatballs in the preheated oven for about 15-20 minutes or until cooked through and browned on the outside.
While the meatballs are baking, prepare the marinara sauce. In a saucepan, combine the crushed tomatoes, minced garlic, oregano, basil, salt, and pepper. Simmer over low heat for about 10-15 minutes, stirring occasionally.
Once the meatballs are done, transfer them to the marinara sauce and let them simmer in the sauce for an additional 5-10 minutes.
Slice the whole wheat sub rolls or baguettes and place a few meatballs with sauce in each roll.
Sprinkle each sub with reduced-fat mozzarella cheese.
Place the subs back in the oven and broil for 2-3 minutes or until the cheese is melted and bubbly.
Garnish with fresh basil leaves if desired.
