Weight Watchers Loaded Zucchini Bake

Servings: 6 (as a side dish)


3-4 Medium-sized zucchini
2 Tomatoes
1/2 White onion
Bacon (use a lower-fat or turkey bacon for a lighter option)
1 Block sharp cheddar cheese, shredded (use reduced-fat cheddar for fewer SmartPoints)
Grated parmesan cheese (use reduced-fat if available)
Olive oil (for misting)
1/2 stick of butter (or use a butter substitute)
Salt and pepper (to taste)
Garlic powder (to taste)
Oregano (to taste)

Preheat the oven to 350 degrees F (175°C).
On low heat, cook bacon in a skillet until crispy. Use a lower-fat or turkey bacon for a lighter version.
Slice the zucchini, onion, and tomato.
In a 9×13 baking dish, evenly layer zucchini until the bottom of the dish is covered.
Drizzle zucchini with a touch of olive oil and season with salt, pepper, and a pinch of garlic powder.
Place several small pats of butter (4-5) on top of the zucchini.
Next, layer with 1/4 of the sliced onion, and then layer with one sliced tomato.
Once the bacon is fully cooked, crumble it.
Add a layer of crumbled bacon on top of the vegetable layers.
Sprinkle the bacon with an even layer of shredded sharp cheddar cheese. Consider using reduced-fat cheddar cheese for fewer Smart Points.
Complete the same layers as listed once more.
Top the final layer of shredded sharp cheddar cheese with grated parmesan cheese.
Sprinkle with oregano.
Cover with foil and bake for 15-20 minutes. Remove the foil and bake an additional 15 minutes or until the vegetables are tender and the cheese is golden brown.
