1 pound extra-lean ground beef (96% lean)
1 small onion, finely chopped
1 bell pepper, diced
2 cloves garlic, minced
1 can (15 oz) diced tomatoes, undrained
1 can (15 oz) tomato sauce
1 cup cooked quinoa or brown rice
1 cup corn kernels (fresh, frozen, or canned)
1 teaspoon dried oregano
1 teaspoon dried basil
Salt and pepper, to taste
1 cup reduced-fat shredded cheddar cheese
Preheat the Oven:
Preheat your oven to 375°F (190°C).
Cook Ground Beef:
In a large skillet over medium heat, cook the ground beef until browned. Drain any excess fat.
Add Vegetables:
Add chopped onion, diced bell pepper, and minced garlic to the skillet. Sauté until the vegetables are softened.
Combine Ingredients:
Stir in the diced tomatoes (with juice), tomato sauce, cooked quinoa or brown rice, corn kernels, dried oregano, dried basil, salt, and pepper. Mix well.
Assemble Casserole:
Transfer the mixture to a baking dish. Sprinkle the top with reduced-fat shredded cheddar cheese.
Bake in the preheated oven for about 25 minutes or until the casserole is bubbly, and the cheese is melted and golden.
Allow the casserole to cool for a few minutes before serving.
