Weight Watchers-Friendly Spinach and Pepper Egg Bites

Ingredients:

  • 1 lb baby spinach
  • 24 eggs (or egg whites to lower points)
  • 2-3 bell peppers, diced
  • Salt and pepper to taste
  • 8 oz reduced-fat cheese (optional but recommended for flavor; opt for fat-free cheese to lower points further)
  • Non-stick muffin pan (silicone works great)

Instructions:

  1. Preheat oven to 325°F and bring a pot of water to boil for blanching the spinach.
  2. Crack all the eggs into a large bowl and scramble them with salt and pepper to taste.
  3. Blanch the spinach by placing it in boiling water for about 1 minute, then drain and chop the spinach finely.
  4. Prepare the muffin tins by spraying them with a little non-stick cooking spray or using silicone muffin pans.
  5. Assemble the egg bites: Pour scrambled egg mixture into each muffin tin, filling each about 2/3 full. Add 1-2 tablespoons of diced bell peppers and 1-2 tablespoons of blanched spinach to each.
  6. Bake: Place the muffin pan in the oven and bake for 10-12 minutes on the middle/bottom rack, or until the eggs are nearly set.
  7. Optional cheese topping: If you’re using cheese, sprinkle some on top of each egg bite. Move the pan to the top rack, switch to broil on high, and cook for 3-4 minutes, or until the cheese is melted and bubbly. Keep an eye on it to avoid burning.
  8. Cool and store: Let them cool, then refrigerate or freeze. Reheat in the microwave when ready to eat.
