Ingredients:

  • 1 can (13.5 oz) light coconut milk (unsweetened)
  • 1 cup fresh strawberries, hulled and chopped
  • 1–2 tablespoons monk fruit sweetener (adjust to taste)
  • 1 teaspoon vanilla extract (optional)
  • Pinch of salt

Instructions:

  1. Blend Ingredients:
    In a blender, combine the light coconut milk, fresh strawberries, monk fruit sweetener, vanilla extract, and a pinch of salt. Blend until the mixture is smooth and well combined.
  2. Freeze:
    Pour the blended mixture into the Ninja Creami pint container. Secure the lid and freeze for at least 24 hours until completely frozen.
  3. Process:
    Insert the frozen pint into your Ninja Creami machine and process according to the “Ice Cream” function.
  4. Adjust Texture:
    If the ice cream is too icy or crumbly, use the “Re-spin” function once or twice to achieve a smoother, creamier texture.
  5. Serve and Enjoy:
    Scoop and serve immediately. Store any leftovers in the freezer and re-spin before serving if needed.
