Weight Watchers-Friendly Fajita Chicken Casserole
Ingredients:

4 cups shredded cooked chicken breast (skinless)
2 cups cooked brown rice (or cauliflower rice for fewer points)
1 (10.5-ounce) can of 98% fat-free cream of chicken soup
1 cup plain non-fat Greek yogurt (instead of sour cream)
1 cup frozen diced onion and bell pepper blend
1 (10-ounce) can diced tomatoes with chilies (like Ro*Tel), undrained
1 1/2 cups low-sodium chicken broth
1 (1.12-ounce) packet reduced-sodium fajita seasoning
1 cup reduced-fat shredded Mexican blend cheese (about 2 cups)
Instructions:
Preheat your oven to 350°F and lightly spray a 9×13-inch casserole dish with nonstick cooking spray.
In a large bowl, combine the shredded chicken, cooked brown rice (or cauliflower rice), cream of chicken soup, Greek yogurt, frozen onion and bell pepper blend, diced tomatoes with chilies, chicken broth, fajita seasoning, and half of the shredded cheese. Mix until well combined.
Pour the mixture into the prepared casserole dish and spread it evenly.
Cover with aluminum foil and bake for 35 minutes.
Remove the foil, sprinkle the remaining shredded cheese on top, and bake uncovered for another 10 minutes, or until the cheese is melted and bubbly.
Let the casserole cool for a few minutes before serving.
