Weight Watchers-Friendly Churro Snacks Recipe
Ingredients:
- 5 cups Honeycomb cereal (approx. 12 points total)
- ⅔ cup Truvia Brown Sugar Blend (or any sugar substitute, approx. 0 points)
- ¼ cup light butter (approx. 10 points)
- ⅓ cup sugar-free corn syrup (approx. 2 points)
- 1 teaspoon vanilla extract (approx. 0 points)
- ¼ teaspoon baking soda (approx. 0 points)
- ½ cup granulated sugar substitute (like Swerve, approx. 0 points)
- 1 ½ teaspoons cinnamon (approx. 0 points)
Instructions:
- Prepare the coating: In a small bowl, mix the sugar substitute and cinnamon together. Set aside.
- Make the caramel: In a medium saucepan over medium heat, melt the light butter, Truvia Brown Sugar Blend, and sugar-free corn syrup together. Stir constantly until the mixture is smooth and begins to bubble. Let it simmer for about 1-2 minutes.
- Add baking soda & vanilla: Remove the caramel mixture from the heat and stir in the vanilla extract and baking soda. The mixture will foam slightly.
- Coat the cereal: Immediately pour the caramel mixture over the Honeycomb cereal in a large bowl. Gently toss until all the cereal is evenly coated.
- Cinnamon sugar finish: Sprinkle the cinnamon-sugar mixture over the caramel-coated cereal while it’s still sticky. Toss the cereal to ensure it’s fully coated.
- Cool & enjoy: Spread the cereal onto a baking sheet lined with parchment paper. Allow it to cool completely, so the caramel firms up. Break into bite-sized pieces.
