Weight Watchers-Friendly Chocolate Covered Donuts

Ingredients:
For the Sourdough:
3 grams fresh yeast
90 grams lukewarm water
140 grams all-purpose flour
For the Final Dough:
Sourdough (from above)
3 egg yolks
15 grams milk
30 grams sugar
20 grams fresh yeast
125 grams all-purpose flour
Two pinches of salt
30 grams unsalted butter
For the Chocolate Coating:
100 grams dark chocolate (at least 70% cocoa)
1 teaspoon unsalted butter
3 tablespoons milk
50 grams icing sugar
Preparation:
Prepare the Sourdough:
In a bowl, mix all the sourdough ingredients (yeast, lukewarm water, and flour) until combined. Shape into a ball and cover with a cloth. Let it rise in a warm place until doubled in size, approximately 1 hour.

Prepare the Final Dough:
In the bowl of a bread maker, combine the milk with dissolved yeast, egg yolks, sugar, sourdough, flour, and salt. Select the “knead only” program. After 10 minutes, add the butter. Continue kneading until a smooth dough forms. Transfer to a greased bowl and let it rise again until doubled in volume, about 1 hour.
Shape and Rise:
Punch down the dough and divide it into 11 equal portions. Shape each into a ball and use your fingers to create a hole in the center. Place on baking paper and let rise for 30 minutes.
Fry Donuts:
Heat oil in a deep pan and fry the donuts until golden brown. Remove with a slotted spoon and drain on absorbent paper.
Prepare the Chocolate Coating:
In a deep plate, combine dark chocolate, butter, and milk. Microwave in 1-minute intervals, stirring between each, until fully melted and smooth. If needed, microwave for an additional 1-2 minutes.
Coat Donuts:
Dip each donut into the chocolate coating, allowing excess to drip off. Place on a rack to cool and let the chocolate set.
