Weight Watchers Chicken Parmesan Sliders
Servings: 12 sliders
Ingredients:
- 1 package (12 count) whole wheat Hawaiian sweet rolls (lower points option)
- 1 lb boneless, skinless chicken breasts
- 1 cup whole wheat flour (or almond flour for lower points)
- 2 large eggs, beaten
- 1 cup whole wheat or panko breadcrumbs (use Italian seasoned or season with Italian herbs)
- 1 cup marinara sauce (look for no-sugar-added or make homemade for lower points)
- 1 cup reduced-fat mozzarella cheese, shredded
- 1/4 cup grated Parmesan cheese
- Cooking spray (preferably olive oil spray)
- Fresh basil leaves (optional, for garnish)
Instructions:
- Prepare Chicken:
- Preheat your oven to 375°F (190°C).
- Slice the chicken breasts into smaller pieces that will fit the rolls. Aim for about 12 small pieces.
- Set up a breading station with three shallow bowls: one with whole wheat flour, one with beaten eggs, and one with seasoned breadcrumbs.
- Bread the Chicken:
- Dip each piece of chicken into the flour, shaking off any excess.
- Next, dip the chicken into the beaten eggs, and then coat with the breadcrumbs, pressing lightly to adhere.
- Bake the Chicken:
- Place the breaded chicken pieces on a baking sheet lined with parchment paper and sprayed with cooking spray.
- Lightly spray the tops of the chicken pieces with cooking spray to help them crisp up.
- Bake for about 20-25 minutes, or until the chicken is cooked through and the coating is golden brown.
- Assemble the Sliders:
- While the chicken is baking, slice the Hawaiian sweet rolls in half horizontally, keeping them attached as a slab. Place the bottom half of the rolls in a baking dish.
- Once the chicken is done, place a piece of chicken on each roll.
- Spoon marinara sauce over the chicken pieces.
- Sprinkle shredded mozzarella and Parmesan cheese over the marinara sauce.
- Bake the Sliders:
- Place the top half of the rolls over the cheese.
- Cover the dish with aluminum foil and bake for 10-15 minutes, or until the cheese is melted and bubbly.
- For the last 5 minutes, uncover the dish to let the tops of the rolls get slightly crispy.
- Serve:
- Remove from the oven and let the sliders cool slightly.
- Garnish with fresh basil leaves if desired.
- Cut into individual sliders and serve warm.
