Weight Watchers Chicken Parmesan Sliders

Servings: 12 sliders

Ingredients:

  • 1 package (12 count) whole wheat Hawaiian sweet rolls (lower points option)
  • 1 lb boneless, skinless chicken breasts
  • 1 cup whole wheat flour (or almond flour for lower points)
  • 2 large eggs, beaten
  • 1 cup whole wheat or panko breadcrumbs (use Italian seasoned or season with Italian herbs)
  • 1 cup marinara sauce (look for no-sugar-added or make homemade for lower points)
  • 1 cup reduced-fat mozzarella cheese, shredded
  • 1/4 cup grated Parmesan cheese
  • Cooking spray (preferably olive oil spray)
  • Fresh basil leaves (optional, for garnish)

Instructions:

  1. Prepare Chicken:
    • Preheat your oven to 375°F (190°C).
    • Slice the chicken breasts into smaller pieces that will fit the rolls. Aim for about 12 small pieces.
    • Set up a breading station with three shallow bowls: one with whole wheat flour, one with beaten eggs, and one with seasoned breadcrumbs.
  2. Bread the Chicken:
    • Dip each piece of chicken into the flour, shaking off any excess.
    • Next, dip the chicken into the beaten eggs, and then coat with the breadcrumbs, pressing lightly to adhere.
  3. Bake the Chicken:
    • Place the breaded chicken pieces on a baking sheet lined with parchment paper and sprayed with cooking spray.
    • Lightly spray the tops of the chicken pieces with cooking spray to help them crisp up.
    • Bake for about 20-25 minutes, or until the chicken is cooked through and the coating is golden brown.
  4. Assemble the Sliders:
    • While the chicken is baking, slice the Hawaiian sweet rolls in half horizontally, keeping them attached as a slab. Place the bottom half of the rolls in a baking dish.
    • Once the chicken is done, place a piece of chicken on each roll.
    • Spoon marinara sauce over the chicken pieces.
    • Sprinkle shredded mozzarella and Parmesan cheese over the marinara sauce.
  5. Bake the Sliders:
    • Place the top half of the rolls over the cheese.
    • Cover the dish with aluminum foil and bake for 10-15 minutes, or until the cheese is melted and bubbly.
    • For the last 5 minutes, uncover the dish to let the tops of the rolls get slightly crispy.
  6. Serve:
    • Remove from the oven and let the sliders cool slightly.
    • Garnish with fresh basil leaves if desired.
    • Cut into individual sliders and serve warm.
