Carrot Cake Recipe

Ingredients:

  • 1/12 package Duncan Hines Decadent Cake mix, classic carrot (91 points)
  • 1/4 cup unsweetened applesauce (0 points)
  • 3/4 cup water (0 points)
  • 2 eggs (0 points)
  • Non-Stick Cooking Spray (5 sprays, 0 points)

Instructions:

  1. Preheat the oven to 350°F as directed on the cake mix box (temperature may vary depending on the darkness of the pan used).
  2. In a large mixing bowl, combine the dry cake mix, eggs, applesauce, and water. Mix until well combined.
  3. Pour the batter into a 13×8 inch cake pan that has been sprayed with non-stick cooking spray.
  4. Bake for about 30 minutes at 350°F or until a toothpick inserted in the center comes out clean. The carrot cake will be light and fluffy.

Recipe Notes:

  • You can optionally add whipped topping for 1 point per serving.
  • To control portion sizes, individually wrap each slice in wax paper.
  • Makes 18 pieces.
  • 5 Points per piece on the WW Blue Plan.

Serving and Storing: This moist carrot cake is best stored in an airtight container in the refrigerator until ready to be eaten. If you prefer it warm, you can microwave individual slices for a few seconds. It’s also delicious straight from the container.

Instructions

  1. Preheat the oven to 350 degrees as directed on cake mix box (may vary depending on darkness of pan used)
  2. In a large mixing bowl, combine the dry cake mix, eggs, applesauce, and water.
  3. Mix until well combined.
  4. Pour the batter into the already sprayed (with non-stick spray), 13x 8 inch cake pan
  5. Bake for about 30 minutes at 375 degrees or until a toothpick inserted in the center comes out clean. The carrot cake will be light and fluffy.

Recipe Notes

I do not frost my cake, but you can add a bit of whipped topping for 1 point if desired. I individually wrap each slice in wax paper so that I don’t over indulge!

Serving and Storing the Weight Watchers Carrot Cake

Since this is a moist cake, I prefer to store this in an airtight container in the refrigerator until ready to be eaten.  If you prefer a warm cake, you can simply pop it into the microwave for a few seconds.  If not, it is perfectly delicious straight from the container.

For additional points, you can add in chopped walnuts, or top with whipped topping or whipped cream.  Just remember to account for those in your daily points allowance.
