Why You’ll Love This Broccoli Cheese Soup

This recipe stands out for its simplicity and low-calorie ingredients, but it’s also incredibly tasty and filling. The combination of tender broccoli, creamy Velveeta cheese, and a touch of spice from the Rotel tomatoes with green chilies results in a rich, comforting soup that’s only 2 Weight Watchers points per cup. Not only is it a satisfying, low-point option, but it also has a delightful texture with chunks of broccoli in every bite.

Here’s why this recipe is such a great fit for Weight Watchers and other low-calorie meal plans:

  1. Low in Points: At just 2 points per cup, it’s a perfect snack or side dish.
  2. Nutrient-Rich: Broccoli provides fiber, vitamins, and minerals, making this soup as nutritious as it is delicious.
  3. Customizable: While the soup is tasty as-is, you can add other low-calorie vegetables or garnish options to suit your tastes.
  4. Easy to Prepare: With minimal ingredients and simple steps, this recipe takes the stress out of meal prepping.
  5. Ideal for Meal Prep: It freezes and refrigerates well, so you can make a big batch at the start of the week.

Ingredients

  • 3 (14.5-ounce) cans of chicken broth: The broth serves as a flavorful base and adds depth to the soup without extra calories.
  • 2 (1 lb) bags of frozen broccoli: Frozen broccoli is both affordable and convenient, adding bulk, fiber, and nutrients.
  • 1 (10.5-ounce) can Rotel brand tomatoes and green chilies: This ingredient brings a mild spice and a tangy flavor that complements the cheese beautifully.
  • 10 ounces Velveeta reduced-fat cheese product: For that creamy, cheesy texture we all crave, without the guilt.

Each of these ingredients has been carefully selected to keep the recipe low in points but high in taste, making it a staple on many Weight Watchers meal plans.

Step-by-Step Instructions

  1. Prepare the Broth Base
Begin by pouring the chicken broth into a large soup pot. Using three cans of broth ensures there’s plenty of liquid to cook the broccoli and incorporate the cheese, resulting in a smooth, well-balanced soup. Turn on medium heat to start warming the broth.
  2. Add the Broccoli
Add the frozen broccoli to the pot. Frozen broccoli is an excellent choice for this recipe because it’s convenient and retains its nutrients well during freezing. Plus, it breaks down nicely in the soup, which helps add thickness and texture. If you prefer a chunkier soup, consider breaking the broccoli into smaller pieces as it cooks.
  3. Incorporate the Tomatoes and Chilies
Pour in the can of Rotel tomatoes and green chilies. The chilies give the soup a slight kick, making it extra satisfying without overwhelming the flavor. If you’re sensitive to spice, you can substitute regular diced tomatoes for a milder taste.
  4. Simmer Until Tender
Stir the ingredients together and allow the mixture to simmer over medium heat for about 25 minutes. This simmering period is essential because it softens the broccoli and melds all the flavors together. Keep the pot partially covered to help the vegetables cook evenly and retain moisture.
  5. Add the Cheese
Cut the Velveeta reduced-fat cheese into cubes. Adding the cheese in smaller pieces will help it melt more evenly and prevent any clumping. Lower the heat to a gentle simmer and gradually add the cheese cubes to the soup. Stir continuously until the cheese has melted completely into the broth, creating a smooth and creamy texture.
  6. Check Consistency
After the cheese has fully melted, check the consistency of the soup. If you prefer a thicker soup, let it simmer for an additional 5-10 minutes to reduce the liquid. For a thinner consistency, add a little more chicken broth.
  7. Season to Taste
This recipe is quite flavorful on its own due to the broth, cheese, and tomatoes, so additional seasoning may not be necessary. However, feel free to add salt, pepper, or other spices according to your preference. A dash of garlic powder or a sprinkle of black pepper can add an extra layer of flavor.
  8. Serve and Enjoy
Ladle the soup into bowls and enjoy it immediately. Garnish with a few pieces of broccoli florets or a small sprinkle of shredded reduced-fat cheese for an added touch.

Tips for Serving and Storing

This Weight Watchers Broccoli Cheese Soup is excellent for weekly meal prep because it reheats well and can be stored in both the refrigerator and freezer. Here’s how to make the most of it:

  • Storing in the Refrigerator: Allow the soup to cool completely before transferring it to an airtight container. It will stay fresh in the fridge for up to 5 days.
  • Freezing Instructions: This soup freezes well. Pour cooled soup into freezer-safe containers or bags, leaving a little space for expansion. It can last up to 3 months in the freezer. To reheat, thaw overnight in the refrigerator, then warm on the stovetop or in the microwave.
