Weight Watchers Banana Pudding Cheesecake Bars

Ingredients:

  • 16 reduced-fat vanilla wafers, crushed
  • 2 ripe bananas, mashed
  • 1/4 cup unsweetened applesauce
  • 8 oz fat-free cream cheese, softened
  • 1/4 cup granulated sugar
  • 1/4 cup non-fat plain Greek yogurt
  • 1/2 tsp vanilla extract
  • 1 large egg
  • 2 large egg whites
  • 1 tbsp all-purpose flour
  • 1/2 cup skim milk
  • 1/2 cup fat-free whipped topping

Instructions:

  1. Preheat the oven to 350ยฐF (175ยฐC). Line an 8-inch square baking dish with parchment paper or coat with cooking spray.
  2. In a small bowl, combine crushed vanilla wafers and applesauce. Press mixture evenly into the bottom of the prepared baking dish.
  3. In another bowl, beat cream cheese and sugar together until smooth. Add mashed bananas, Greek yogurt, and vanilla extract; beat until combined.
  4. Add egg, egg whites, and flour to the cream cheese mixture; beat until smooth. Gradually add skim milk, beating well after each addition.
  5. Pour batter over the crust in the baking dish. Smooth the top with a spatula.
  6. Bake for 30-35 minutes or until set. Remove from the oven and let it cool completely on a wire rack.
  7. Once cooled, spread whipped topping evenly over the cheesecake layer. Cover and refrigerate for at least 4 hours or overnight.
  8. Cut into 16 bars. Each serving is 1 bar.
