
Vegan Zucchini Patties
Ingredients:
- 2 medium zucchinis, grated
- 1/2 cup breadcrumbs (ensure they are vegan)

- 1 tablespoon lemon juice

Instructions:
- Prepare the Flax Egg:
- In a small bowl, mix together the flaxseed meal and water. Let it sit for about 5 minutes until it thickens, creating a flax egg.
- Grate Zucchini:
- Grate the zucchinis using a box grater or a food processor. Place the grated zucchini in a clean kitchen towel and squeeze out excess moisture.
- Mix Ingredients:
- In a large mixing bowl, combine the grated zucchini, breadcrumbs, chopped parsley, minced garlic, chopped green onions, nutritional yeast, lemon juice, and flax egg. Season with salt and pepper to taste. Mix until all ingredients are well combined.
- Form Patties:
- Heat 1 tablespoon of olive oil in a large skillet over medium heat.
- Take about 1/4 cup of the zucchini mixture and form it into a patty shape using your hands. Place it gently into the hot skillet. Depending on the size of your skillet, you can cook multiple patties at once, but make sure not to overcrowd the pan.
- Cook Patties:
- Cook the patties for 3-4 minutes on each side, or until golden brown and crispy. Use a spatula to carefully flip them over halfway through cooking. Add more olive oil to the skillet as needed for subsequent batches.
- Serve:
- Once cooked, transfer the zucchini patties to a plate lined with paper towels to absorb any excess oil.
- Serve the vegan zucchini patties hot as a side dish or as a main course with your favorite dipping sauce or vegan yogurt on the side.
