
Vegan Wonton Soup

Ingredients:
For the Wontons:
- 1/2 pound (225g) extra-firm tofu, crumbled
- 1/2 pound (225g) raw shiitake mushrooms, finely chopped
- 2 cloves garlic, minced
- 1 green onion, finely chopped
- 1 tablespoon soy sauce (or tamari for gluten-free option)
- 1 teaspoon sesame oil
- 1/2 teaspoon fresh ginger, grated
- 1/2 teaspoon salt
- 1/4 teaspoon white pepper
- 1 package vegan wonton wrappers (usually about 40 wrappers)
For the Soup:
- 8 cups (2 liters) vegetable broth
- 2-3 slices of fresh ginger
- 2-3 garlic cloves, smashed
- 1 green onion, cut into 2-inch pieces
- Salt and white pepper to taste
- 1-2 cups bok choy or baby bok choy, chopped (or any greens of your choice)
- Fresh cilantro leaves, for garnish (optional)
Instructions:
- Prepare the Wonton Filling:
- In a large mixing bowl, combine the crumbled tofu, chopped shiitake mushrooms, minced garlic, chopped green onion, soy sauce, sesame oil, grated ginger, salt, and white pepper. Mix until well combined.
- Assemble the Wontons:
- Place a small spoonful of the filling in the center of each wonton wrapper. Moisten the edges of the wrapper with water, then fold the wrapper over the filling to create a triangle. Press the edges firmly to seal, making sure there are no air pockets. Repeat until all the filling is used up.
- Prepare the Soup Base:
- In a large pot, bring the vegetable broth to a simmer over medium heat. Add the slices of fresh ginger, smashed garlic cloves, and pieces of green onion. Season with salt and white pepper to taste.
- Cook the Wontons:
- Carefully drop the wontons into the simmering broth, making sure they are not sticking together. Cook for about 5-7 minutes, or until the wontons float to the surface and are cooked through.
- Add the Greens:
- Once the wontons are cooked, add the chopped bok choy or baby bok choy to the soup. Cook for an additional 2-3 minutes, or until the greens are wilted and tender.
- Serve:
- Ladle the vegan wonton soup into bowls, making sure to distribute the wontons and greens evenly. Garnish with fresh cilantro leaves if desired, and serve hot.
