
Vegan Tiger Butter

Ingredients:
- 8 oz raw cacao butter
- 2 tbsp extra virgin coconut oil
- ½ tsp agar or xanthan gum
- 1½ cups creamy, unsalted peanut butter
- ¼ cup powdered stevia (reb-a) or other sweetener of choice
- 1 tbsp stevia (reb-a) or other sweetener of choice
- ½ cup full-fat coconut cream
- 1 tsp vanilla extract
- Pinch of sea salt
- 4 oz dark chocolate chips (Lily’s), melted
Directions:
- Prepare the Pan:
- Line a jelly roll pan or small sheet pan with parchment paper.
- Melt the Base Ingredients:
- In a double boiler over low heat, melt the raw cacao butter, stirring occasionally.
- Once melted, add the coconut oil and agar (or xanthan gum). Stir to combine.
- Combine the Mixture:
- Remove from heat and whisk in the peanut butter, powdered stevia, additional sweetener, coconut cream, vanilla extract, and a pinch of sea salt until smooth and well combined.
- Form the Tiger Butter:
- Pour the mixture onto the lined sheet pan, spreading it evenly.
- Drizzle the melted dark chocolate over the top in rows.
- Using a wooden skewer or the tip of a knife, gently create a marble pattern by running it through the chocolate.
- Set and Store:
- Place the sheet pan in the fridge for 1½ hours or until firm.
- Store in the fridge for up to 2 weeks or in the freezer for up to 3 months.
Notes:
- For a quick, non-vegan option: Melt 1½ bags of white chocolate chips and add peanut butter. Stir to combine. Pour the mixture onto a lined baking sheet and drizzle melted chocolate chips on top in rows. Gently run a skewer or knife through to create a marble pattern. Set in the fridge.
