Vegan Zucchini and Potato Patties

Ingredients:

  • 2 medium zucchinis, grated
  • 2 medium potatoes, peeled and grated
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 cup chickpea flour (besan)
  • 1/4 cup nutritional yeast
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2-3 tablespoons olive oil, for frying

Instructions:

  1. In a large bowl, combine grated zucchinis, grated potatoes, chopped onion, minced garlic, chickpea flour, nutritional yeast, ground cumin, paprika, salt, and pepper. Mix well until everything is evenly distributed.
  2. Heat 1 tablespoon of olive oil in a large skillet over medium heat.
  3. Take a small handful of the mixture and shape it into a patty. Place it gently into the skillet. Repeat with the remaining mixture, making sure not to overcrowd the skillet.
  4. Cook the patties for about 4-5 minutes on each side, or until they are golden brown and crispy. You may need to add more olive oil to the skillet as you cook the patties.
  5. Once cooked, transfer the patties to a plate lined with paper towels to absorb any excess oil.
  6. Serve the vegan zucchini and potato patties warm, garnished with your favorite sauce or vegan yogurt.
