
Vegan Zucchini and Potato Patties
Ingredients:
- 2 medium zucchinis, grated
- 2 medium potatoes, peeled and grated
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1/2 cup chickpea flour (besan)
- 1/4 cup nutritional yeast
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- 2-3 tablespoons olive oil, for frying
Instructions:
- In a large bowl, combine grated zucchinis, grated potatoes, chopped onion, minced garlic, chickpea flour, nutritional yeast, ground cumin, paprika, salt, and pepper. Mix well until everything is evenly distributed.
- Heat 1 tablespoon of olive oil in a large skillet over medium heat.
- Take a small handful of the mixture and shape it into a patty. Place it gently into the skillet. Repeat with the remaining mixture, making sure not to overcrowd the skillet.
- Cook the patties for about 4-5 minutes on each side, or until they are golden brown and crispy. You may need to add more olive oil to the skillet as you cook the patties.
- Once cooked, transfer the patties to a plate lined with paper towels to absorb any excess oil.
- Serve the vegan zucchini and potato patties warm, garnished with your favorite sauce or vegan yogurt.
