- 3 Yukon potatoes, peeled and chopped
- 1/2 onion, chopped
- 1 red bell pepper, chopped
- 1/2 carrot, chopped
- 1 cup grapeseed oil
- 2 avocados
- 2 tbsp turmeric
- Juice of 3 lemons
- 2 tbsp sea salt
- 4 tbsp Cajun seasoning
- 2 tbsp black pepper
- Sprinkle of crushed red peppers (optional)
- 10 bay leaves
- 1 to 3 cups nutritional yeast (season to taste)
- 24 oz water
Instructions:
- In a large pot, combine the Yukon potatoes, onion, red bell pepper, carrot, turmeric, lemon juice, sea salt, Cajun seasoning, black pepper, crushed red peppers (if using), and bay leaves.
- Add 24 oz of water and bring to a boil. Reduce heat and simmer until the vegetables are tender, about 20 minutes.
- Remove the bay leaves from the pot.
- Pour the cooked vegetables and liquid into a blender. Add the nutritional yeast, avocados, and grapeseed oil.
- Blend until the mixture is smooth and creamy. Adjust seasoning to taste.
