Ingredients:

  • 3 Yukon potatoes, peeled and chopped
  • 1/2 onion, chopped
  • 1 red bell pepper, chopped
  • 1/2 carrot, chopped
  • 1 cup grapeseed oil
  • 2 avocados
  • 2 tbsp turmeric
  • Juice of 3 lemons
  • 2 tbsp sea salt
  • 4 tbsp Cajun seasoning
  • 2 tbsp black pepper
  • Sprinkle of crushed red peppers (optional)
  • 10 bay leaves
  • 1 to 3 cups nutritional yeast (season to taste)
  • 24 oz water

Instructions:

  1. In a large pot, combine the Yukon potatoes, onion, red bell pepper, carrot, turmeric, lemon juice, sea salt, Cajun seasoning, black pepper, crushed red peppers (if using), and bay leaves.
  2. Add 24 oz of water and bring to a boil. Reduce heat and simmer until the vegetables are tender, about 20 minutes.
  3. Remove the bay leaves from the pot.
  4. Pour the cooked vegetables and liquid into a blender. Add the nutritional yeast, avocados, and grapeseed oil.
  5. Blend until the mixture is smooth and creamy. Adjust seasoning to taste.
