Ingredients:

  • 1 cup raw cashews, soaked for at least 4 hours or overnight
  • 1 1/4 cups water
  • 2 tbsp tapioca starch
  • 2 tbsp nutritional yeast
  • 1 tbsp lemon juice
  • 1 tsp apple cider vinegar
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1 tsp salt
  • 1 tbsp agar agar powder (optional, for a firmer texture)

Instructions:

  1. Prepare Cashews: Drain and rinse the soaked cashews.
  2. Blend Ingredients: In a blender, combine the cashews, water, tapioca starch, nutritional yeast, lemon juice, apple cider vinegar, garlic powder, onion powder, and salt. Blend until completely smooth.
  3. Cook Mixture: Pour the mixture into a saucepan. If using agar agar powder, dissolve it in a small amount of water first and then add to the saucepan. Cook over medium heat, stirring constantly.
  4. Thicken the Mixture: As the mixture heats up, it will begin to thicken and become stretchy. This process takes about 5-7 minutes. Make sure to keep stirring to avoid any lumps.
  5. Set the Cheese: Once thickened, transfer the mixture into a lightly greased mold or container. Let it cool to room temperature, then refrigerate for at least 2 hours to set.
