Ingredients

For Creamy Miso Ramen
  • 1 block instant ramen
  • 1 tbsp sesame paste (or tahini)
  • 1/2 tbsp low-sodium miso paste
  • 2 tsp light soy sauce
  • 1 tsp hot bean paste
  • 1 tsp ginger paste
  • 1 tsp mirin
  • 1 tbsp sesame oil
  • 1 cup oat milk
  • 1 cup water
  • Handful of dried kombu
Garnish
  • 1 tsp chili oil
  • Handful of spring onions
  • 2 tsp toasted sesame seeds
Toppings of Your Choice
  • 3 Vegan Dumplings
  • 2 tbsp Spring Onions (chopped)
  • 1/2 cup Charred Corn
  • 1/2 cup Sauteed Shitake Mushrooms

Instructions

1. Prepare Broth
  • Boil dried kombu in 1 cup of water for 5 minutes. Let it soak for 10 minutes.
  • In a pot or pan, heat sesame oil and fry ginger paste until fragrant.
  • Add kombu water, sesame paste, hot bean paste, and soy sauce. Whisk until combined.
  • Simmer the broth for 5 minutes over low heat. Add oat milk.
2. Add Miso
  • Dilute miso paste with some water. Filter it directly into the broth through a sieve. Mix well.
  • Simmer on low for 10 minutes.
3. Prepare Noodles
  • Cook instant ramen according to package instructions. Drain and rinse with cold water to prevent sticking.
4. Assemble
  • Place cooked noodles in a bowl. Pour the hot broth over the noodles.
  • Add your desired toppings such as vegan dumplings, spring onions, charred corn, and sautéed mushrooms.
  • Garnish with chili oil, chopped spring onions, and toasted sesame seeds.

Notes

  • For an extra creamy broth, you can use more oat milk or soy milk instead of water.
  • To make this dish gluten-free, replace ramen noodles with brown rice ramen or rice noodles. Ensure your miso is certified gluten-free and swap soy sauce for tamari.
