Ingredients:
- 2 large cucumbers, thinly sliced
- 4 ripe tomatoes, chopped
- 1 red onion, thinly sliced
- 1/4 cup olive oil
- 1/4 cup red wine vinegar
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1/2 teaspoon dried basil
- Salt and pepper, to taste
- Fresh parsley or basil, chopped, for garnish (optional)
Instructions:
- In a large mixing bowl, combine the thinly sliced cucumbers, chopped tomatoes, and thinly sliced red onion.
- In a separate small bowl, whisk together the olive oil, red wine vinegar, minced garlic, dried oregano, dried basil, salt, and pepper to make the marinade.
- Pour the marinade over the cucumber, tomato, and onion mixture in the large bowl. Toss gently to coat all the vegetables evenly with the marinade.
- Cover the bowl with plastic wrap or transfer the salad to an airtight container. Refrigerate for at least 1 hour, or preferably overnight, to allow the flavors to meld and the vegetables to marinate.
- Before serving, give the salad a gentle toss. Taste and adjust seasoning if necessary.
- Garnish with fresh chopped parsley or basil, if desired, before serving.
