Vegan Marinated Cucumber, Tomato, and Onion Salad

Ingredients:

  • 2 large cucumbers, thinly sliced
  • 4 ripe tomatoes, chopped
  • 1 red onion, thinly sliced
  • 1/4 cup olive oil
  • 1/4 cup red wine vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • Salt and pepper, to taste
  • Fresh parsley or basil, chopped, for garnish (optional)

Instructions:

  1. In a large mixing bowl, combine the thinly sliced cucumbers, chopped tomatoes, and thinly sliced red onion.
  2. In a separate small bowl, whisk together the olive oil, red wine vinegar, minced garlic, dried oregano, dried basil, salt, and pepper to make the marinade.
  3. Pour the marinade over the cucumber, tomato, and onion mixture in the large bowl. Toss gently to coat all the vegetables evenly with the marinade.
  4. Cover the bowl with plastic wrap or transfer the salad to an airtight container. Refrigerate for at least 1 hour, or preferably overnight, to allow the flavors to meld and the vegetables to marinate.
  5. Before serving, give the salad a gentle toss. Taste and adjust seasoning if necessary.
  6. Garnish with fresh chopped parsley or basil, if desired, before serving.
