vegan lemon bar recipes
1 cup all-purpose flour
1/2 cup vegan butter, at room temperature
1/4 cup powdered sugar
1/4 tsp salt
1/2 cup fresh lemon juice
1 tbsp lemon zest
1 cup granulated sugar
1/4 cup cornstarch
1/4 tsp turmeric (for color)
Powdered sugar for dusting
Preheat your oven to 350°F (180°C).
In a mixing bowl, combine the flour, powdered sugar, salt, and vegan butter. Mix until the mixture forms a dough.
Press the dough into a 8×8 inch square baking pan, making sure to create an even layer.
Bake the crust for 20 minutes or until it becomes golden brown.
While the crust is baking, whisk together the lemon juice, lemon zest, granulated sugar, cornstarch, and turmeric until smooth.
Once the crust is ready, pour the lemon filling over the crust.
Bake the lemon bars for an additional 20-25 minutes, or until the filling is set.
Allow the bars to cool to room temperature before dusting with powdered sugar.
Cut the bars into squares and enjoy!
