Ingredients:
Greek seasoning:
- Lemon juice 3 tbsp.
- Black pepper 1/4 tsp.
- Salt 3/4 tsp.
- Dijon mustard 2 tsp.
- Dried basil 1 tsp.
- Dried oregano 1 tbsp.
- Minced garlic 4 cloves
- Olive oil 2 tbsp.
For veggies and Tofu:
- Block tofu 350 g
- Zucchini 1 medium
- Bell pepper 1 sliced
- Medium red onion 1
- Cherry tomatoes 1 cup
- Kalamata olives 1/2 cup
- Vegan feta 1/4 cup
Instructions:
- Firstly, preheat the oven to 400 degrees.
- Take a small bowl and then properly mix all the ingredients of the Greek seasoning in it.
- Then take a large baking sheet and then spread the tofu and the other veggies and then layer the seasoning mixture evenly all over it.
- Now mix all the things properly until all the veggies become well coated with the Greek seasoning.
- Then bake it in the preheated oven for at least 40 minutes and then sprinkle the olives and the feta in it.
- You can then serve it with roasted potatoes, hummus, etc.
Notes:
Cook all the veggies and the tofu accordingly and then if you want to store it put it in an airtight container and then store it for almost 4 days.
Besides, if you want to make this recipe oil-free then you can use vegetable broth instead of olive oil.
