Vegan Colorful Veggie Stir-Fry

Ingredients:

  • Vegetables:
    • 1 cup broccoli florets
    • 1 red bell pepper, sliced
    • 1 yellow bell pepper, sliced
    • 1 cup mushrooms, halved
    • 1 carrot, julienned
    • 1 green bell pepper, sliced
    • 1 small onion, chopped
    • 1 zucchini, sliced
  • Protein:
    • 1 block firm tofu, pressed and cubed
  • Sauce:
    • 2 tablespoons soy sauce (or tamari for gluten-free)
    • 1 tablespoon hoisin sauce
    • 1 tablespoon rice vinegar
    • 1 teaspoon sesame oil
    • 1 teaspoon fresh ginger, minced
    • 2 cloves garlic, minced
    • 1 teaspoon cornstarch mixed with 2 tablespoons water
  • Optional Garnish:
    • Sesame seeds
    • Red pepper flakes

Instructions:

  1. Prepare the Ingredients:
    • Wash and chop all the vegetables as mentioned above.
    • Press the tofu to remove excess moisture and then cube it.
  2. Make the Sauce:
    • In a small bowl, mix soy sauce, hoisin sauce, rice vinegar, sesame oil, minced ginger, and minced garlic. Set aside.
  3. Cook the Tofu:
    • Heat 1 tablespoon of oil in a large skillet or wok over medium-high heat.
    • Add the tofu and cook until golden brown and slightly crispy. Remove from the skillet and set aside.
  4. Stir-Fry the Vegetables:
    • In the same skillet, add another tablespoon of oil if needed.
    • Add the onion and carrot first and stir-fry for about 2 minutes.
    • Add the remaining vegetables and continue to stir-fry for another 5-7 minutes until they are tender-crisp.
  5. Combine Everything:
    • Return the tofu to the skillet.
    • Pour the sauce over the stir-fry and stir to combine.
    • Add the cornstarch mixture and cook for another 1-2 minutes until the sauce thickens and coats the vegetables and tofu.
  6. Garnish and Serve:
    • Sprinkle with sesame seeds and red pepper flakes if desired.
    • Serve hot over rice or noodles.
