Vegan Cinnamon Rolls

Ingredients:

  • For the dough:
    • 1 cup almond milk, warmed
    • 2 1/4 teaspoons active dry yeast
    • 1/4 cup granulated sugar
    • 1/4 cup vegan butter, melted
    • 3 cups all-purpose flour, plus more for dusting
    • 1/2 teaspoon salt
  • For the filling:
    • 1/4 cup vegan butter, softened
    • 1/2 cup brown sugar
    • 1 tablespoon ground cinnamon
  • For the icing:
    • 1 cup powdered sugar
    • 1-2 tablespoons almond milk
    • 1/2 teaspoon vanilla extract

Instructions:

  1. Activate the yeast: In a large mixing bowl, combine warm almond milk, yeast, and a pinch of sugar. Let it sit for 5-10 minutes until it becomes frothy.
  2. Make the dough: To the frothy yeast mixture, add melted vegan butter, sugar, salt, and 2 cups of flour. Stir until well combined. Add the remaining flour gradually until a dough forms.
  3. Knead the dough: Transfer the dough to a floured surface and knead for about 5-7 minutes until it becomes smooth and elastic. Place the dough in a greased bowl, cover it with a clean kitchen towel, and let it rise in a warm place for about 1-1.5 hours until it doubles in size.
  4. Prepare the filling: In a small bowl, mix softened vegan butter, brown sugar, and cinnamon until well combined.
  5. Assemble the rolls: After the dough has risen, punch it down and roll it out into a rectangle about 1/4 inch thick. Spread the filling evenly over the dough.
  6. Roll the dough: Starting from one of the long sides, tightly roll the dough into a log. Use a sharp knife to cut the log into 12 equal-sized rolls.
  7. Arrange the rolls: Place the rolls in a greased baking dish, leaving a little space between each roll. Cover them with a clean kitchen towel and let them rise for another 30-45 minutes.
  8. Bake the rolls: Preheat the oven to 350°F (175°C). Once the rolls have risen, bake them in the preheated oven for 25-30 minutes, or until they are golden brown and cooked through.
  9. Make the icing: While the rolls are baking, prepare the icing by mixing powdered sugar, almond milk, and vanilla extract in a small bowl until smooth.
