
Vegan Chickpea Pot Pie Noodle Skillet
Ingredients:
- 8 oz (about half a box) of dry whole wheat or gluten-free noodles
- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 1 can (15 oz) chickpeas, drained and rinsed
- 1 cup frozen peas
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 teaspoon dried parsley
- 4 cups vegetable broth
- 1/4 cup all-purpose flour or gluten-free flour
- Salt and pepper to taste
Instructions:
- Cook Noodles:
- Cook the noodles according to the package instructions until al dente. Drain and set aside.
- Prepare Skillet:
- In a large skillet, heat the olive oil over medium heat. Add the diced onion and garlic, and sauté until fragrant and translucent, about 2-3 minutes.
- Add Vegetables and Chickpeas:
- Add the diced carrots and celery to the skillet, and cook for another 3-4 minutes until slightly softened. Stir in the chickpeas and frozen peas, and cook for an additional 2 minutes.
- Season:
- Sprinkle the dried thyme, rosemary, and parsley over the vegetables and chickpeas. Season with salt and pepper to taste, and stir well to combine.
- Make Sauce:
- Sprinkle the flour over the vegetable mixture in the skillet, and stir to coat evenly. Cook for 1-2 minutes to lightly toast the flour. Gradually pour in the vegetable broth, stirring constantly, until the sauce thickens and coats the back of a spoon.
- Add Noodles:
- Once the sauce has thickened, add the cooked noodles to the skillet. Stir gently to combine, making sure the noodles are coated in the sauce.
- Serve:
- Remove the skillet from heat and let it sit for a few minutes to allow the flavors to meld together. Serve the vegan chickpea pot pie noodle skillet hot, garnished with additional parsley if desired.
