Vegan Chicken and Broccoli Stir-Fry

Ingredients:

  • 1 lb firm tofu, pressed and cut into cubes
  • Salt and pepper, to taste
  • 2 tablespoons soy sauce (or tamari for gluten-free option)
  • 1 tablespoon hoisin sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon maple syrup or agave syrup
  • 1 tablespoon cornstarch
  • 2 tablespoons vegetable oil, divided
  • 1 small onion, thinly sliced
  • 3 cloves garlic, minced
  • 1 head broccoli, cut into florets
  • 1 red bell pepper, thinly sliced
  • 1 carrot, thinly sliced
  • 1 cup snow peas
  • Cooked rice or noodles, for serving

Instructions:

  1. Prepare the Tofu:
  • Press the tofu to remove excess water. Cut into cubes and season with salt and pepper.
  1. Make the Sauce:
  • In a small bowl, whisk together soy sauce, hoisin sauce, rice vinegar, maple syrup (or agave syrup), and cornstarch until smooth. Set aside.
  1. Cook the Tofu:
  • In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add tofu cubes and cook until golden brown on all sides, about 5-7 minutes. Remove tofu from the skillet and set aside.
  1. Prepare the Stir-Fry:
  • In the same skillet, add the remaining tablespoon of vegetable oil. Add sliced onion and minced garlic, and sauté for 2-3 minutes until fragrant.
  1. Add Vegetables:
  • Add broccoli florets, red bell pepper, carrot slices, and snow peas to the skillet. Stir-fry for 5-7 minutes until vegetables are tender-crisp.
  1. Combine and Simmer:
  • Return the tofu to the skillet. Pour the prepared sauce over the tofu and vegetables. Stir well to coat everything in the sauce. Cook for another 2-3 minutes until the sauce thickens slightly and everything is heated through.
  1. Serve:
  • Serve the vegan chicken and broccoli stir-fry hot over cooked rice or noodles.
