
Vegan Chicken and Broccoli Stir-Fry

Ingredients:
- 1 lb firm tofu, pressed and cut into cubes
- Salt and pepper, to taste
- 2 tablespoons soy sauce (or tamari for gluten-free option)
- 1 tablespoon hoisin sauce
- 1 tablespoon rice vinegar
- 1 tablespoon maple syrup or agave syrup
- 1 tablespoon cornstarch
- 2 tablespoons vegetable oil, divided
- 1 small onion, thinly sliced
- 3 cloves garlic, minced
- 1 head broccoli, cut into florets
- 1 red bell pepper, thinly sliced
- 1 carrot, thinly sliced
- 1 cup snow peas
- Cooked rice or noodles, for serving
Instructions:
- Prepare the Tofu:
- Press the tofu to remove excess water. Cut into cubes and season with salt and pepper.
- Make the Sauce:
- In a small bowl, whisk together soy sauce, hoisin sauce, rice vinegar, maple syrup (or agave syrup), and cornstarch until smooth. Set aside.
- Cook the Tofu:
- In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add tofu cubes and cook until golden brown on all sides, about 5-7 minutes. Remove tofu from the skillet and set aside.
- Prepare the Stir-Fry:
- In the same skillet, add the remaining tablespoon of vegetable oil. Add sliced onion and minced garlic, and sauté for 2-3 minutes until fragrant.
- Add Vegetables:
- Add broccoli florets, red bell pepper, carrot slices, and snow peas to the skillet. Stir-fry for 5-7 minutes until vegetables are tender-crisp.
- Combine and Simmer:
- Return the tofu to the skillet. Pour the prepared sauce over the tofu and vegetables. Stir well to coat everything in the sauce. Cook for another 2-3 minutes until the sauce thickens slightly and everything is heated through.
- Serve:
- Serve the vegan chicken and broccoli stir-fry hot over cooked rice or noodles.
