Vegan Cheesy Chickpea Fritters

Ingredients:

  • 2 cups cooked chickpeas, drained and rinsed
  • 1/2 cup nutritional yeast
  • 1/4 cup chickpea flour (or other flour of choice)
  • 2 tablespoons ground flaxseeds
  • 1/4 cup water
  • 2 cloves garlic, minced
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • Salt and pepper, to taste
  • 1/4 cup chopped fresh parsley (optional)
  • 2 tablespoons olive oil, for frying

Instructions:

  1. In a large mixing bowl, mash the cooked chickpeas with a fork or potato masher until they are mostly broken down but still have some texture.
  2. In a small bowl, mix together the ground flaxseeds and water. Let it sit for a few minutes until it thickens and becomes gel-like.
  3. Add the nutritional yeast, chickpea flour, minced garlic, onion powder, paprika, salt, pepper, and chopped fresh parsley (if using) to the mashed chickpeas. Stir until well combined.
  4. Add the flaxseed mixture to the chickpea mixture and mix until everything is evenly incorporated.
  5. Heat the olive oil in a large skillet over medium heat.
  6. Scoop about 1/4 cup of the chickpea mixture and form it into a patty with your hands. Place the patty in the hot skillet and flatten it slightly with a spatula.
  7. Cook the fritters for 3-4 minutes on each side, or until they are golden brown and crispy.
  8. Remove the fritters from the skillet and place them on a plate lined with paper towels to drain any excess oil.
  9. Repeat with the remaining chickpea mixture, adding more olive oil to the skillet as needed.
  10. Serve the vegan cheesy chickpea fritters hot, optionally with your favorite dipping sauce or alongside a salad.
