Vegan Cheesy Chickpea Fritters
Ingredients:
- 2 cups cooked chickpeas, drained and rinsed
- 1/2 cup nutritional yeast
- 1/4 cup chickpea flour (or other flour of choice)
- 2 tablespoons ground flaxseeds
- 1/4 cup water
- 2 cloves garlic, minced
- 1 teaspoon onion powder
- 1 teaspoon paprika
- Salt and pepper, to taste
- 1/4 cup chopped fresh parsley (optional)
- 2 tablespoons olive oil, for frying
Instructions:
- In a large mixing bowl, mash the cooked chickpeas with a fork or potato masher until they are mostly broken down but still have some texture.
- In a small bowl, mix together the ground flaxseeds and water. Let it sit for a few minutes until it thickens and becomes gel-like.
- Add the nutritional yeast, chickpea flour, minced garlic, onion powder, paprika, salt, pepper, and chopped fresh parsley (if using) to the mashed chickpeas. Stir until well combined.
- Add the flaxseed mixture to the chickpea mixture and mix until everything is evenly incorporated.
- Heat the olive oil in a large skillet over medium heat.
- Scoop about 1/4 cup of the chickpea mixture and form it into a patty with your hands. Place the patty in the hot skillet and flatten it slightly with a spatula.
- Cook the fritters for 3-4 minutes on each side, or until they are golden brown and crispy.
- Remove the fritters from the skillet and place them on a plate lined with paper towels to drain any excess oil.
- Repeat with the remaining chickpea mixture, adding more olive oil to the skillet as needed.
- Serve the vegan cheesy chickpea fritters hot, optionally with your favorite dipping sauce or alongside a salad.
