Vegan Broccoli Croquettes

Ingredients:

  • 2 cups finely chopped broccoli florets
  • 1/2 cup breadcrumbs (use gluten-free if needed)
  • 1/4 cup finely chopped onion
  • 1/4 cup nutritional yeast
  • 2 tablespoons ground flaxseed mixed with 5 tablespoons water (flax egg)
  • 2 cloves garlic, minced
  • 1 tablespoon lemon juice
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Cooking spray or oil for frying

Instructions:

  1. Steam Broccoli:
    • Steam the finely chopped broccoli florets until tender, about 5-7 minutes. Once cooked, drain any excess water and set aside to cool.
  2. Prepare Flax Egg:
    • In a small bowl, mix ground flaxseed with water and set aside for 5-10 minutes to thicken, creating a flax egg.
  3. Combine Ingredients:
    • In a large mixing bowl, combine the steamed broccoli, breadcrumbs, finely chopped onion, nutritional yeast, flax egg, minced garlic, lemon juice, dried oregano, salt, and black pepper. Mix well until all ingredients are evenly combined.
  4. Form Croquettes:
    • Using your hands, shape the mixture into small croquettes or patties, about 2-3 inches in diameter and 1/2 inch thick.
  5. Cook Croquettes:
    • Heat cooking spray or oil in a skillet over medium heat. Once the skillet is hot, carefully place the broccoli croquettes in the skillet, making sure not to overcrowd the pan. Cook for 3-4 minutes on each side, or until golden brown and crispy.
  6. Serve:
