- 1 can of mixed beans (400g)
- 1 can of green lentils (400g)
- 1 can of chickpeas (400g)
- 2 cans of chopped tomatoes (800g total)
- 4-5 potatoes, chopped
- 2 large carrots, grated
- Chili powder, to taste
- Salt and pepper, to taste
Instructions:
Slow Cooker Method:
- Drain and rinse the mixed beans, green lentils, and chickpeas.
- Add the mixed beans, green lentils, chickpeas, chopped tomatoes, chopped potatoes, and grated carrots into the slow cooker.
- Add chili powder, salt, and pepper to taste.
- Stir well to combine all ingredients.
- Cook on low for 6-8 hours or on high for 3-4 hours, until the vegetables are tender and the flavors are well combined.
Hob Method:
- Drain and rinse the mixed beans, green lentils, and chickpeas.
- In a large pot, add the mixed beans, green lentils, chickpeas, chopped tomatoes, chopped potatoes, and grated carrots.
- Add chili powder, salt, and pepper to taste.
- Stir well to combine all ingredients.
- Bring to a boil, then reduce the heat and simmer for 45 minutes to 1 hour, until the vegetables are tender and the flavors are well combined.
