Tex-Mex Chopped Chicken Salad is high in proteins and is combined with lots of chopped vegies and give you a good taste. You can also have it as an alternate to your dinner. It is also best for those who wants to eat chicken with veggies at the same time.

Ingredients:
Keto ranch dressing 1 cup
Keto-friendly taco seasoning 2 tbsp.
Cooked chicken breast 3 cups
Diced tomatoes 1 cup
Sliced cucumber 1 cup
cooked and cooled cauliflower florets 1 cup
Sliced green onions 1 cup
Black soy beans 1 can
Full-fat cheese 4 oz
Fresh chopped cilantro 1/4 cup
Lime juice 1/2 cup
Crushed pork rinds or almond flour-based keto-friendly tortilla chips 1/2 chips

For toppings: (optional):
Diced jalapeño

Toasted pumpkin seeds
Sliced avocado

Instructions:
Take a small bowl, take keto friendly taco seasoning and ranch dressing and mix them altogether.
Put the mixture in the refrigerator till it gets ready for use.
Add soybeans, cubed cheese, chopped cilantro, sliced green onions, cooked cauliflower florets, diced cucumber, tomatoes, chopped lettuce, and diced chicken in another bowl and mix them until well combined.
Add lemon juice on the dressing ingredients.
Now add pork rinds or tortilla chips in it.
Now add the ranch and taco dressing gradually over the salad.
Now add salt and pepper to the required taste.
Garnish it with sliced avocado, jalapeño and toasted pumpkin seeds. (optional).
Tex-Mex Chopped Chicken Salad is now ready to be served.
