Spinach and Feta Chicken Rolls
A delightful combination of tender chicken filled with a savory spinach, feta, and sun-dried tomato mixture. Perfect for a flavorful and healthy dinner!

Ingredients:

  • For the Chicken Rolls:
    • 4 boneless, skinless chicken breasts
    • 1 tablespoon olive oil
    • 1 onion, finely chopped
    • 2 cloves garlic, minced
    • 5 ounces fresh spinach, chopped
    • 1/2 cup crumbled feta cheese
    • 1/4 cup sun-dried tomatoes, chopped
    • Salt and pepper to taste
    • Toothpicks for securing

Directions:

  1. Preheat the Oven:
    • Preheat your oven to 375°F (190°C).
  2. Prepare the Filling:
    • In a skillet, heat the olive oil over medium heat.
    • Add the chopped onion and garlic, and sauté until the onion becomes translucent, about 5 minutes.
    • Add the chopped spinach to the skillet and cook until wilted, stirring occasionally. This should take about 2-3 minutes.
    • Remove the skillet from heat and allow the mixture to cool slightly.
    • In a bowl, combine the cooked spinach mixture with the crumbled feta cheese and chopped sun-dried tomatoes. Season with salt and pepper to taste.
  3. Prepare the Chicken:
    • Carefully butterfly each chicken breast by slicing it horizontally, being careful not to cut all the way through.
    • Place the butterflied chicken between two sheets of plastic wrap or parchment paper and gently pound it to an even thickness using a meat mallet or rolling pin.
  4. Stuff and Roll the Chicken:
    • Spoon a portion of the spinach and feta mixture onto each chicken breast.
    • Roll each chicken breast tightly around the filling and secure the edges with toothpicks.
  5. Bake the Chicken Rolls:
    • Place the stuffed chicken breasts seam-side down in a baking dish.
    • Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the juices run clear.
  6. Serve:
    • Remove the toothpicks before serving.
    • Garnish with fresh herbs and additional chopped sun-dried tomatoes if desired.
