Ingredients

  • 1 medium spaghetti squash
  • 1-2 tablespoons olive oil
  • Salt and black pepper, to taste
  • 2 cups spaghetti sauce (store-bought or homemade)
  • 1-2 cups of mixed vegetables (e.g., bell peppers, mushrooms, zucchini), chopped

Instructions

  1. Prepare the Spaghetti Squash:
    • Preheat your oven to 350°F (175°C).
    • Cut the spaghetti squash in half lengthwise and scoop out the seeds and stringy pulp from the center.
    • Lightly brush the inside of each squash half with olive oil.
    • Season with salt and black pepper.
  2. Bake the Squash:
    • Place the squash halves cut side down on a baking sheet.
    • Bake in the preheated oven for about 40 minutes, or until the squash is tender and easily pierced with a fork.
    • Remove from the oven and let cool slightly.
  3. Prepare the Sauce:
    • While the squash is baking, prepare your spaghetti sauce.

  4. Combine and Bake Again:
    • Once the squash is cool enough to handle, use a fork to scrape the flesh into spaghetti-like strands.
    • Pour the prepared spaghetti sauce with vegetables into each squash half and stir gently to combine.
    • Return the squash halves to the oven and bake for an additional 5-10 minutes, allowing the flavors to blend together.
  5. Serve and Enjoy:
    • Remove from the oven and let cool slightly before serving.
