- 1 medium spaghetti squash
- 1-2 tablespoons olive oil
- Salt and black pepper, to taste
- 2 cups spaghetti sauce (store-bought or homemade)
- 1-2 cups of mixed vegetables (e.g., bell peppers, mushrooms, zucchini), chopped
Instructions
- Prepare the Spaghetti Squash:
- Preheat your oven to 350°F (175°C).
- Cut the spaghetti squash in half lengthwise and scoop out the seeds and stringy pulp from the center.
- Lightly brush the inside of each squash half with olive oil.
- Season with salt and black pepper.
- Bake the Squash:
- Place the squash halves cut side down on a baking sheet.
- Bake in the preheated oven for about 40 minutes, or until the squash is tender and easily pierced with a fork.
- Remove from the oven and let cool slightly.
- Prepare the Sauce:
- While the squash is baking, prepare your spaghetti sauce.
- In a medium saucepan, heat your spaghetti sauce over medium heat.
- Add your choice of mixed vegetables to the sauce and cook until the vegetables are tender.
- Combine and Bake Again:
- Once the squash is cool enough to handle, use a fork to scrape the flesh into spaghetti-like strands.
- Pour the prepared spaghetti sauce with vegetables into each squash half and stir gently to combine.
- Return the squash halves to the oven and bake for an additional 5-10 minutes, allowing the flavors to blend together.
