Slow Cooker Minestrone Soup

Ingredients:

  • 1 can kidney beans, drained (15 oz)
  • 6 cups low-sodium vegetable broth
  • 1 large onion, chopped
  • 1 small zucchini, diced
  • 2 large carrots, diced
  • 28 oz canned crushed tomatoes
  • 1 cup green beans
  • 2 ribs celery, diced
  • 3 cloves garlic, minced
  • ¾ tsp dried thyme
  • 1 tbsp fresh parsley, minced
  • 1 tsp salt
  • ¼ tsp black pepper
  • 1½ tsp dried oregano
  • 4 cups fresh spinach, chopped
  • ½ cup elbow macaroni
  • ¼ cup grated Parmesan cheese

Instructions:

  1. In a slow cooker, combine kidney beans, vegetable broth, crushed tomatoes, chopped onion, diced zucchini, green beans, diced carrots, diced celery, minced garlic, parsley, thyme, oregano, salt, and black pepper. Stir to combine.
  2. Cover and cook on low setting for approximately 6-8 hours, until vegetables are tender.
  3. About 15 minutes before serving, bring a large pot of water to a boil. Cook the elbow macaroni according to package instructions until al dente. Drain and set aside.
  4. Stir in the cooked macaroni and chopped spinach into the slow cooker. Cook for an additional 15 minutes.
  5. Serve the minestrone soup hot, topped with grated Parmesan cheese.

Notes:

  • Be careful not to overcook the pasta. It should be firm when added to the soup.
