Ingredients:

  • Bell Peppers: 1 large bell pepper, thinly sliced
  • Onions: 1 medium onion, thinly sliced
  • Mushrooms: 1 cup sliced mushrooms (preferably cremini or portobello)
  • Meati Mushroom Steak: 1 package, thinly sliced
  • Myokos Cashew Cheese: 1/2 cup shredded or sliced
  • Plant-Based Provolone: 2-3 slices (adjust to taste)
  • Olive Oil: 1-2 tablespoons for frying
  • Salt and Pepper: to taste
  • Whole Wheat Hoagie Rolls: 2-3 rolls, depending on size

Instructions:

  1. Prepare the Vegetables:
    • Heat olive oil in a large skillet over medium-high heat.
    • Add sliced onions and bell peppers. Sauté until they start to soften, about 5-7 minutes.
    • Add the mushrooms and continue to cook until the vegetables are tender and slightly caramelized, about another 5-7 minutes.
    • Season with salt and pepper to taste.
  2. Cook the Meati Mushroom Steak:
    • In a separate pan, cook the Meati mushroom steak according to package instructions. If they are pre-cooked, simply heat them through; if raw, cook until they are browned and cooked through.
    • Slice the cooked steak thinly.
  3. Combine and Melt Cheese:
    • Add the sliced Meati mushroom steak to the pan with the sautéed vegetables.
    • Add the plant-based provolone slices on top of the mixture, allowing them to melt.
    • Stir in the shredded Myokos cashew cheese, allowing it to melt and coat the mixture evenly.
  4. Assemble the Sandwich:
    • Toast the hoagie rolls if desired.
    • Fill each roll with the hot vegetable and mushroom steak mixture.
    • Serve immediately.
