2 cups unsweetened fine desiccated coconut
1/2 cup reduced-fat graham cracker crumbs
3 ounces sugar-free pineapple jello powder
Instructions:
Prepare Ingredients:
Thoroughly drain the crushed pineapple to remove as much liquid as possible. This helps in achieving the right consistency for the mixture.

Mix the Base:
In a large mixing bowl, combine the drained crushed pineapple and reduced-fat cream cheese. Mix until well combined.
Add Flavor and Texture:
Add the sugar-free pineapple jello powder to the pineapple and cream cheese mixture. Stir until evenly distributed.
Form the Balls:
Using your hands, form the mixture into small balls (about 1 inch in diameter).
Coat the Balls:
Roll each ball in the graham cracker crumbs until well coated.
Then roll them in the unsweetened desiccated coconut to finish.
Chill:
Place the balls on a baking sheet lined with parchment paper and refrigerate for at least 1 hour to firm up.
Serve:
Once chilled, serve your Pineapple Christmas Balls and enjoy this festive, low-point treat!
