INGREDIENTS
BASIC ROASTED POTATOES:
- 2.5 lb Yukon gold potatoes (or any other type you like; washed, dried, and cut into 1-inch cubes)
- 3 tbsp Olive oil
- 3 tbsp Unsalted butter
- 1/2 tsp Sea salt (plus more to taste at the end)
- 1/4 tsp Black pepper (plus more to taste at the end)
- 1 tsp Garlic powder
- 1 tsp Dried oregano

OPTIONAL ADD-INS:
- 3 slices Bacon (cut into small pieces)
- 1 cup Grated parmesan cheese
INSTRUCTIONS

- If time allows, soak diced potatoes in cold water for at least 30 minutes or overnight. (This step is optional, but it removes excess starch and they cook up crispier.) Pat dry before cooking.
- Preheat the oven to 400 degrees F (204 degrees C).
- Place potatoes on the baking sheets. Add oil, butter, salt, pepper, garlic powder, and dried oregano. Add parmesan cheese and bacon, if using. Toss to coat all potatoes.
- Roast potatoes in the middle of the oven for 25 minutes
- Stir carefully with a spoon and roast for about 10 minutes, until soft and crispy.
- Adjust salt and pepper to taste, if needed.
