Cranberry Orange Scones 💛

These scones use almond flour, Greek yogurt, and fresh orange zest to keep them light, tender, and blood-sugar friendly.

Ingredients
- 1 ½ cups almond flour
- ½ cup oat flour (or finely ground oats)
- 1 tbsp baking powder
- 2 tbsp granulated monk fruit or erythritol
- Pinch of salt
- 1 large egg
- ⅓ cup plain nonfat Greek yogurt
- 1 tsp vanilla extract
- Zest of 1 orange
- ¾ cup fresh or frozen cranberries (roughly chopped)
Optional glaze:
- 2 tbsp powdered erythritol
- 1–2 tsp fresh orange juice
Instructions
- Preheat oven to 350°F (175°C).
- In a bowl, mix almond flour, oat flour, baking powder, sweetener, and salt.
- Add Greek yogurt, egg, vanilla, and orange zest. Mix until a soft dough forms.
- Fold in cranberries gently.
- Place dough on parchment paper and shape into a round disc.
- Cut into 6–8 wedges and separate slightly.
- Bake for 18–22 minutes until lightly golden.
- Cool slightly. Add optional orange glaze on top.
