Ingredients

  • 1 Β½ cups almond flour
  • Β½ cup oat flour (or finely ground oats)
  • 1 tbsp baking powder
  • 2 tbsp granulated monk fruit or erythritol
  • Pinch of salt
  • 1 large egg
  • β…“ cup plain nonfat Greek yogurt
  • 1 tsp vanilla extract
  • Zest of 1 orange
  • ΒΎ cup fresh or frozen cranberries (roughly chopped)

Optional glaze:

  • 2 tbsp powdered erythritol
  • 1–2 tsp fresh orange juice

Instructions

  1. Preheat oven to 350Β°F (175Β°C).
  2. In a bowl, mix almond flour, oat flour, baking powder, sweetener, and salt.
  3. Add Greek yogurt, egg, vanilla, and orange zest. Mix until a soft dough forms.
  4. Fold in cranberries gently.
  5. Place dough on parchment paper and shape into a round disc.
  6. Cut into 6–8 wedges and separate slightly.
  7. Bake for 18–22 minutes until lightly golden.
  8. Cool slightly. Add optional orange glaze on top.
