Ingredients:

2 cups cauliflower florets (substitute for elbow macaroni)
1 cup shredded Mozzarella Cheese
1/2 Cup Shredded Cheddar Cheese
Instructions:

In a large skillet, sauté your ground meat over medium-high heat until it’s HALF cooked, then remove it from the heat.

Add minced garlic, onions, and olive oil to the skillet. Continue cooking until the meat is fully cooked.

Pour in water and low-sugar beef broth, low-carb tomato sauce, diced tomatoes (check for added sugars), Italian seasoning, bay leaves, seasoned salt, pepper, and Adobo seasoning. Mix well.

Lower the heat, cover the skillet, and allow it to simmer for about 20 minutes, stirring occasionally.

Replace the elbow macaroni with cauliflower florets. Add them to the skillet, stir well until everything is combined.

Cover the skillet once again and let it simmer for about 15-20 minutes, or until the cauliflower is tender.

Once cooked, remove the bay leaves.

Add only the cheddar cheese and mix until it’s well combined.

Sprinkle the shredded Mozzarella cheese on top just before serving.
