No-Bake Homemade Crunch Bars

This quick and easy snack or dessert is naturally gluten-free, vegan, dairy-free, and can be made sugar-free! It uses just one bowl, five ingredients, and less than 2 minutes of prep time.

Equipment:

Ingredients:

  • 3 cups crispy rice cereal (preferably a low-sugar or sugar-free variety)
  • 1 1/2 cups sugar-free chocolate chips (e.g., Lily’s)
  • 1 cup powdered peanut butter (like PB2, prepared as directed)
  • 1/2 cup sugar-free maple syrup
  • 1/4 cup coconut oil (can substitute with 1/4 cup unsweetened applesauce for fewer points)

Instructions:

  1. Prepare the Baking Dish: Line an 8 x 8-inch baking dish or deep baking tray of choice with parchment paper and set aside.
  2. Mix Dry Ingredients: Add the crispy rice cereal into a large mixing bowl and set aside.
  3. Melt Wet Ingredients: In a microwave-safe bowl or on the stovetop, combine the sugar-free chocolate chips, prepared powdered peanut butter, sugar-free maple syrup, and coconut oil (or applesauce). Heat until melted, stirring occasionally.
