Ingredients
Base Layer:
- 1 cup crushed pretzels (use low-sodium pretzels for fewer points)
- 1/4 cup light butter, melted (e.g., “I Can’t Believe It’s Not Butter Light”)
- 1/4 cup sugar-free syrup (like maple or caramel flavor)
Caramel Layer:
- 1/3 cup sugar-free caramel sauce
- 1 tbsp almond butter (or peanut butter powder mixed with water to reduce points)
- Pinch of sea salt (optional)
Topping:
- 1/4 cup mini dark chocolate chips (use Lily’s sugar-free dark chocolate for lower points)
- 1/4 cup pretzel pieces (for texture)

Instructions
- Prepare the Base:
- Crush the pretzels into small bits (not powder) using a food processor or by placing them in a ziplock bag and crushing with a rolling pin.
- In a bowl, mix the crushed pretzels with melted light butter and sugar-free syrup. The mixture should resemble wet sand.
- Press the mixture into an 8×8-inch pan lined with parchment paper. Use the back of a spoon or your hands to firmly pack it down. Chill in the freezer for 10 minutes.
- Create the Caramel Layer:
- In a microwave-safe bowl, combine the sugar-free caramel sauce and almond butter. Heat for 15–20 seconds until smooth and pourable. Stir well.
- Spread the caramel mixture evenly over the pretzel base. Add a sprinkle of sea salt if desired. Freeze for another 10 minutes.
- Add the Topping:
- Melt the chocolate chips in the microwave in 15-second intervals, stirring between each until smooth.
- Drizzle the melted chocolate over the caramel layer and sprinkle pretzel pieces on top for added crunch.
- Freeze for at least 20–30 minutes or until fully set.
- Slice and Serve:
- Remove the bars from the pan by lifting the parchment paper. Slice into 16 squares using a sharp knife.
- Store in an airtight container in the fridge for up to a week or in the freezer for longer.
