🥐 Mediterranean Spinach and Cheese Puff Pastry Squares
Ingredients:
- 1 sheet puff pastry, thawed (store-bought or homemade)
- 1 tbsp olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 5 oz (about 150 g) fresh spinach (or thawed frozen spinach, well drained)
- 1/2 cup crumbled feta cheese
- 1/2 cup ricotta or cream cheese
- 1/4 cup grated Parmesan cheese
- 1 egg, lightly beaten (for filling)
- 1 tsp dried oregano (or fresh chopped herbs like dill or parsley)
- 1/4 tsp black pepper
- Pinch of nutmeg (optional, for depth)
- 1 egg yolk + 1 tbsp water (for egg wash)
- Sesame seeds or nigella seeds (optional, for topping)
Instructions:
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Prepare filling – Heat olive oil in a pan, sauté onion until soft, add garlic, then spinach. Cook until wilted and most moisture evaporates. Remove from heat, cool slightly.
- Mix filling – In a bowl, combine spinach mixture with feta, ricotta (or cream cheese), Parmesan, egg, oregano, pepper, and nutmeg. Stir well.
- Cut pastry – Roll out puff pastry and cut into 9–12 equal squares.
- Assemble – Place 1–2 tbsp of filling in the center of each square. Fold corners slightly inward (or leave open for a rustic look).
- Finish – Brush edges with egg wash. Sprinkle with sesame or nigella seeds if desired.
- Bake – 15–20 minutes until puffed and golden brown.
🍴 Serving Ideas:
- Serve warm as an appetizer, snack, or light lunch with a Greek salad.
- Great for parties or brunch platters.
- Can be made ahead and reheated in the oven.
