🍴 Instructions
1. Prepare the Sweet Potatoes
- Preheat your oven to 425°F (220°C).
- Line a large baking sheet with parchment paper.
- In a bowl, toss the sweet potato rounds with olive oil, smoked paprika, cumin, oregano, garlic powder, salt, and pepper.
- Spread the slices evenly on the prepared baking sheet — make sure they don’t overlap for even roasting.
2. Roast
- Roast for 25–30 minutes, flipping halfway through, until the sweet potatoes are tender inside and golden brown on the edges.
3. Assemble the Mediterranean Layers
- Transfer the roasted rounds onto a serving platter.
- Sprinkle crumbled feta evenly over the top while still slightly warm.
- Scatter the dried cranberries (or sun-dried tomatoes) and jalapeño slices over the feta.
- Add a generous handful of chopped parsley or cilantro.
- If using, sprinkle toasted sesame seeds for extra crunch and flavor.
4. Finish with a Drizzle
- Drizzle a little extra virgin olive oil over everything.
- Squeeze lime or lemon juice to add brightness.
- Season with an extra pinch of salt and pepper if needed.
